This Pineapple Coconut French Toast serves multiple purposes. Initially, when fresh milk may not be readily available, canned coconut milk is utilized directly from the pantry. Furthermore, it is infused with delightful tropical flavors that may inspire you to reconsider your tropical vacation plans.

You only require some bread, a few eggs, and a can of coconut milk to begin. (We discovered that light coconut milk devoid of the clumpy coconut cream contained the simplest solution.) Instead of a can of coconut milk, almond milk flavored with coconut can be substituted.

Coconut Pineapple French Toast

A delectable recipe for French toast with a tropical flavor, which can be prepared with pantry ingredients.

Comprising Ingredients

  • 1 1/2 cups unsweetened coconut-flavored almond milk or one 13.5-ounce can of unsweetened light coconut milk
  • 4 eggs
  • 1 tablespoon minced ginger, fresh
  • Ground cinnamon, to taste
  • 6- to 8 slices of stale bread
  • Three tablespoons of vegetable oil
  • 1 peeled, cored, and cut pineapple. Coat with cooking spray

Procedure:

  1. Combine the eggs and almond milk in a large basin until creamy and yellow. Combine grated ginger and a pinch of cinnamon comprehensively.
  2. After dipping a slice of bread into the egg mixture and allowing it to absorb, reverse the slice of bread so that both sides are saturated without becoming soggy. Permit the liquid to trickle off.
  3. In a large skillet, melt one tablespoon of the vegetable oil. Soaked in water, two bread segments should be cooked in a pan for three to four minutes per side or until golden brown. Add a tablespoon of butter and 1 tablespoon of oil to the pan, followed by the remaining two slices, until all six slices are cooked. (Add additional segments if there is excess liquid.)
  4. Grill pineapple slices for 3 to 4 minutes, or until light grill marks appear on each side, spraying with additional cooking spray over medium heat.
  5. French toast should be served with grilled pineapple segments.

The pineapple acquires an additional smoky-sweet flavor when grilled. If fresh pineapple is unavailable for grilling, frozen or defrosted pineapple, or drained pineapple from a can, may be substituted. Additionally, when served with pineapple, the sweetness is sufficient to eliminate the need for nectar. (Although a few relatives still prefer to engage in that activity.)
